The Philosophy
We don’t take shortcuts. Time is an ingredient. We culture high-fat cream for 72 hours, creating a rich, velvety cultured cream that is separated into buttermilk and butter. This provides deep flavor profiles you can’t find in any store. This is the foundation of the Lemon Buttermilk Pound Cake and the Southern Chocolate Chip Cookies.

The Method
Every loaf is a two-day journey of patience. Our starter is fed and nurtured daily to ensure peak flavor and rise, followed by a meticulous process of hand-scaling, hand-folding, and cold-fermentation. This slow, traditional method allows the flavors to deepen and the crust to develop its signature crackle. It’s a labor-intensive craft that results in a more digestible, artisan bread that simply cannot be rushed.

The History
Wildcat Farm is the culmination of over 20 years of baking. After years spent mastering the meticulous art of custom cakes, the focus has shifted to the “long game”—the patient, rhythmic life of an artisan farm. This transition allowed us to trade fast-paced production for the disciplined, slow-motion craft of sourdough and baked goods. Every loaf and cookie we offer is a reflection of that heritage, baked with a level of expertise that only two decades in the kitchen can provide.

At Wildcat Farm, we believe the best flavors are found in the present moment. Because we bake in rhythm with the Ohio seasons, we keep our menu moving—constantly rotating our offerings to highlight the freshest harvests and the most inspiring local ingredients. Specifically, these seasonal creations remain available in limited quantities for a short window of time. In fact, once the season shifts or the flour dust settles on a particular recipe, it may not return until next year.
While our specialty loaves and treats offer “catch-them-while-you-can” experiences, some things are too good to move. For instance, you can always count on our flagship Southern Chocolate Chip cookies to anchor the menu, featuring our signature house-made brown butter and 72-hour cultured dairy.
